Ewan is Inter College Master Chef
Seven students from LMC and Furness College took part in an inter-college Master Chef competition, held at LMC on Tuesday, with LMC Hospitality and Catering Level 2 students taking home the three prizes on the day.
Students had to prepare a two course menu of their choice from a set list of ingredients. The finished dishes were then judged by Graeme Shuttleworth; head chef at No 17, Milnthorpe; Craig Sherrington, former LMC student and now head chef at Virginia House, Ulverston and LMC Governor John Kirton.
The judges gave the students feedback on their dishes before presenting the prizes of trophies, kitchen knives and cook books. They said that they had seen some good techniques demonstrated, such as making fresh pasta and risotto and using sous vide and that there had been good use of the ingredients. They encouraged the students to make use of opportunities for work placement to build on their practical experience in the workplace.
Elle Wright was awarded third place for her menu of Chicken and Bacon Lasagne with homemade garlic bread followed by white chocolate panacotta with a mixed berry compote.
Second place was awarded to Karyna Brood for her menu of seared chicken breast served on a bed of leek, potato and bacon finished with a white wine cream sauce.
The winner was Ewan Lawrenson-Mckie, with his menu of pan fried chicken breast, squash puree, wild mushrooms, roasted squash and soubise sauce followed by winter berry soufflé and white chocolate crème anglaise.
Ewan, who alongside his studies works at the White Cross, Lancaster, said that he had found the competition to be a good experience, and had enjoyed challenging himself to make a technical dish.
The judges said the competition was very close, with only a few points between the contestants. They chose Ewan as the winner because his menu was the most adventurous and technically challenging. He showed imagination and combined modern and classic techniques, demonstrating confidence in trying new things.
LMC Hospitality & Catering Tutor Adrian Law said "The annual Masterchef competition between our two colleges is an excellent experience, giving our students something to prepare and plan for. It is a good link between LMC and Furness College, and I look forward to our return visit next year."
