An Apprenticeship is a perfect choice if you want to continue your studies and develop your skills, knowledge and behaviours in a specific industry, while also earning a salary in full-time employment; kickstarting your long-term career path.
A Chef de Partie is responsible for running a specific section of the kitchen. This type of chef usually manages a small team of workers, which they must keep organised so that dishes go out on time and the work area remains clean and orderly. However, in smaller kitchens a Chef de Partie may work independently as the only person in their section. Also known as a station or section chef, the Chef de Partie reports to the Senior Chef and has a very important role in any kitchen.
As an apprentice you will attend College one day a week to develop your skills, knowledge and behaviours as a Chef de Partie. You will also be expected to undertake regular home study on this course.
During your Apprenticeship you will gain the knowledge and understanding of culinary trends, food safety procedures and business strategy, alongside learning to brief, coach and motivate others to deliver high quality dishes.
You will develop advanced skills and techniques for producing the following dish and/or recipe specifications:
Meat, poultry and game dishes
Fish and shellfish dishes
Vegetable and vegetarian dishes
Dough and batter products
Hot, cold and frozen desserts
Biscuits, cakes and sponges
Paste and patisserie products

Upon completion of this Apprenticeship you may progress onto degree-level study or further full time work. A Level 3 Chef de Partie Apprenticeship could lead onto progression in a senior culinary chef role.

To study this Apprenticeship you must:
Have enthusiasm for the subject area
Enjoy working with people
Have good timekeeping
Show evidence of good skills in practical subjects
Have a commitment to study
Be able to work independently
Have good interpersonal skills
You must also have 5 GCSEs at grade C/4 or higher including Maths and English OR a related Level 2 qualification PLUS grade C/4 or higher in BOTH Maths and English.
