Case Study: Adrian Wood – Head Chef, Holiday Inn
We have been working with Lancaster & Morecambe College for five years. During this period, members of our staff have been enrolled on a number of different work based training programmes in areas including Food Production and Cooking, Hospitality and Catering, Professional Cookery and Team Leading.
The training and resulting qualifications which ourstaff have received in these areas have led to a marked improvement in their abilities, confidence and performance that has been of direct benefit for our branch of the HolidayInn. Their successes have been consistently supported by the enthusiastic and flexible approach of the staff at Lancaster & Morecambe College. We are proud to enjoy a close partnership with the College who have enabled us to develop our workforce and provide us with a key link to the local community.

ROB TALBOT - OWNER/MANAGER REDWELL INN, KIRKBY LONSDALE AND TALBOT’S AT THURNHAM HALL
Rob started out as an apprentice at LMC after becoming ‘bored’ of education in school. He studied Level 3 Professional Cookery at Lancaster & Morecambe College, and thoroughly enjoyed the college experience. Rob says that the ‘help and support that College gave me was invaluable’.
After working locally as a head chef, Rob took the decision to become a proprietor and took on The Cross Keys in Carnforth followed by The Dalton Arms.
Not content with one new venture, Rob took on 2 new pubs in 2009, The Redwell Inn in Kirkby Lonsdale and Talbot’s at Thurnham Hall. Through all this, Rob retained a good relationship with Lancaster & Morecambe College and now employs 6 apprentices himself at his two restaurants. He says that apprentices are ‘definitely more motivated as they are doing it for themselves and have chosen this route’ and he hopes to take on more apprentices in the future. Rob adds ‘I am still very passionate about working in this industry and I find it very fulfilling working with my Apprentices, passing on my experience to others.’
